π Ingredients:
Whole Tilapia β 2 (cleaned, descaled, with deep slits)
Thick curd (dahi) β 3 tbsp (hung curd preferred)
Ginger-garlic paste β 1Β½ tbsp
Kashmiri red chili powder β 2 tsp (for color and mild heat)
Regular red chili powder β Β½ tsp (for extra heat)
Turmeric powder β Β½ tsp
Coriander powder β 1 tsp
Cumin powder β Β½ tsp
Garam masala β Β½ tsp
Chaat masala β Β½ tsp (optional)
Lemon juice β 1 tbsp
Mustard oil β 1 tbsp (for authentic flavor)
Salt β to taste
Orange-red food color β a pinch (optional)
Butter or ghee β for frying/basting
π§ Marination:
1. Clean and pat dry the fish. Make deep slits on both sides.
2. In a bowl, mix curd, ginger-garlic paste, spices, lemon juice, mustard oil, and optional food color.
3. Apply the marinade thoroughly on the fish β inside slits, belly, and surface.
4. Cover and let it marinate for at least 1 hour (overnight gives best flavor).
