In a bowl, mix the Greek yogurt with the honey and vanilla extract until the mixture is smooth and evenly combined.
Assemble the wafers π§
Place the wafers in a cup-shaped shape on a plate or flat tray that can fit in your freezer.
Fill them halfway with vanilla yogurt.
